SOMEL is a Spirit Using only natural honey
Nestled in the shadow of the majestic Caucasus Mountains, Caucasus Spirits LLC was born from a passion for preserving Georgia’s ancient honey-making heritage and transforming it into an exceptional spirit. Founded in 2022 by a group of local artisans and beekeepers, our company set out to honor a 5,500-year-old tradition by crafting small-batch honey spirit that captures the soul of our land.
We partner with dedicated mountain beekeepers who tend the world-renowned Apis mellifera caucasica-Georgia, whose long tongues reach nectar no other bee can. Their careful selection of wildflower honey, brimming with the region’s rich biodiversity, forms the heart of our recipe. Distilled through our exclusive MULLER AROMAT pot still, the raw spirit is gently coaxed to perfection, then allowed to rest for at least six months in stainless-steel tanks so its aromas and flavors can fully harmonize.
Every bottle we produce is a testament to our unwavering commitment to quality, from hive to hand-bottled finish. 2022
First Production
In the summer of 2022, high in the foothills of the Caucasus Mountains, our founding beekeepers distilled the very first small batch of honey spirit using age-old clay amphorae. By harnessing pure, wildflower nectar from Georgia’s untamed slopes, this inaugural “golden elixir” marked the birth of a tradition that would one day become Caucasus Spirits.

In 2025, we celebrate our most ambitious release yet: a limited-edition honey spirit distilled in the exclusive MULLER AROMAT pot still and allowed to rest for no less than twelve months. This landmark expression embodies over five decades of refinement—an homage to Georgia’s millennia-old honey heritage and our unwavering commitment to premium quality.
